Yields 10 people

For the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar

To make the Premix (yields 850ml, to serve 10)

400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Method

For the Syrup: Combine all the components in a saucepan, bring to a gentle boil, stirring until the sugar dissolves. Next, turn off the burner allowing it to cool entirely. Decant to a clean bottle, cap it and store in the refrigerator, where it will keep for up to a month.

To make Batch Mix: Pour all the spirits and syrup in a large bottle, let it rest for one hour, then strain best through cheesecloth, to ensure it's completely strained.

When ready to serve: Add 85ml of your premix into a mixing glass filled with ice, gently stirring gently for about 60 seconds to cool it down. Strain to a chilled martini glass or similar, decorate with the cranberries and finish with a brief mist of the essential oil over the drink.
